Easy Weeknight Meal
This recipe, Mom’s Easy Meatloaf Recipe, is one of my own recipes that I have been using for 30 years. I have tweaked it here and there. I have learned of the substitutions that I can use if I am out of something. For example: If I am out of store-bought bread crumbs, I substitute with oatmeal, saltines or club crackers. If I’m low on ketchup, I add tomato sauce instead. That’s one of the reasons I have always used this recipe. It’s easy. Click here if you would like the printable PDF.
Have leftovers
I make this recipe on a Sunday or Monday so there will be leftovers for the next day’s dinner. If you follow my blog, then you know I am all about the leftovers. My roast beef recipe and vegetables is one of my favorite meals where there are always leftovers. If I make the meatloaf and roast beef recipes back to back, then I only have to cook three meals through the week. This helps me so much through the busy work/school week. - 2 lbs ground beef
- 1 egg slightly beatened
- 1/2 cup onion diced
- 1/2 cup milk
- 3/4 cup ketchup
- 1 cup breadcrumbs can substitute with crackers
- 1 tsp salt
- 1/2 tsp pepper
Ingredients

- Mix ingredients together in a bowl with your hands until everything is combined Add meatloaf Cover with extra ketchup or your choice of topping
- Form a loaf
- Spray loaf pan with cooking spray
- Bake at 350 degrees for 60-75 minutes or until cooked through Let stand for 5 minutes before serving
Be sure to put the meatloaf pan on a baking sheet. The meatloaf will spatter while it cooks. Enjoy!
